Hot sugar causes severe burns because it reaches extremely high temperatures (> 150° C) and sticks to the skin like molten plastic. Cool the burn immediately with running cold water for at least 20 minutes. Do not peel off hardened sugar or try to remove anything stuck to the skin. Because hot sugar syrups retain heat and stick to the dermis, they can cause deeper tissue damage than boiling water. Proper first aid is critical to minimize scarring.
